Air Fryer Banana Coffee Cake 气炸锅脆皮奶酥香蕉蛋糕


More air fryer recipes on board, this is a moist and not too sweet banana coffee cake with crunchy cookie topping. One of my favourite afternoon treat. I can wallop a few in one go. haha..... Please read on for more.

Ingredients for cake :
125gm  all purpose flour
1 tspn  baking powder
80gm   brown sugar
80gm  butter, soften
1 large egg
1-1/2 TB  milk
3/4 cup  mashed banana

Method :
(1)  combine flour and baking powder and mix till cooperated.
(2)  beat butter and sugar till creamy then add in egg and continue beating till smooth.


(3)  now, stir in mashed banana till well mixed.
(4)  next, fold in half of the flour and mix well. Then alternately add in milk and finally, stir in the remaining flour. Stir till well combined.

Ingredients for streusel topping :
30gm  all purpose flour
1/2 tspn  cinnamon powder
pinch of salf
50gm  brown sugar/white sugar for lighter colour
20gm  melted butter
(combine flour, cinnamon powder, salt & sugar then mix well, stir in melted butter to form crumb then keep chilled)

Ingredients for middle sugar layer :
2 TB  brown sugar
1/2 tspn  cinnamon powder
(mix well)

TO ASSEMBLE :
(1) spread half of the cake batter to a 6" square baking tray lined with baking paper.

(2) next, sprinkle on sugar mixture evenly to the batter.


(3) spread the remaining cake batter to baking tray then spread on the streusel topping.
(4) finally, bake at preheated air fryer 160'C for about 30 minutes.

Remarks :  place one pair of bamboo chopsticks below the baking tray. This will helps better air circulation when baking.

Homemade Ginger Wine 自制姜酒

My 2nd attempt making ginger wine. After a 3 whole months of waiting, I am truly happy with the result. It turns out really strong and smell really good compare to the previous batch I made. Keropok Lekor Terengganu 登嘉楼特色炸鱼饼

I can't believe it myself that I'm actually making  keropok lekor  !!! Gosh, never in my life I would imagine myself making this, Terengganu fish cracker ! Its hubby favourite. I actually wanted to buy some of these during my last visit to Terengganu but hubby said NO ! However, I knew I'm going to give this a shot when I reached home and this is it. I have fulfilled it.  Keropok lekor  is the specialty of the east and it is normally made with small fishes or leftover fishes from the market place.
