Deep Fried Onigiri Rice Ball 脆皮炸飯糰

Ingredients for Rice Ball : 3 cups cooked rice (must be soft) 2 pkt x 50gm mayonnaise 1 tablespoon lemon juice 1 canned x 150gm tuna chunks in oil (discharged oil) 3 tablespoon mushroom floss 1 tablespoon nori flakes 1/2 tspn salt 1 tspn mushroom granules 1/2 tablespoon ground black pepper Ingredients for coating : 1 egg beaten 1-1/2 cup bread crumb Method  : (1) Combine all rice ball ingredients and mix well. Then divide into 14 portions with an ice cream scope. (2) Now, press to round the mixed rice between a plastic sheet or you may also use a onigiri press gadget (as picture shown the above) (3) Next, dip rice ball into beaten egg and then coat with bread crumb. Finally, deep fried till golden brown. Do make sure deep fry over medium low heat to get the perfect colour balance. Other than that try use really soft cooked rice for this recipe. If you're using leftover chilled rice then make sure steam it before used.

Sweet & Savoury Alkaline Rice Cake 咸甜碱水糕

Another long waiting recipe from my list to do ! Finally, I have time to work this out recently. This  alkaline rice cake  is quite similar to  chwee kuih , the common steamed rice cake. The only difference is the additional of alkaline liquid to the batter or some may use borax, which created a chewy & springy texture to this cake. This is actually a heritage Hokkien snack dish and it is normally served with gula melaka coconut gravy & spicy dried shrimp paste. Does it sounds good to you ! The water did help a lot to smooth up the surface beautifully. Rice Cooker Nasi Kunyit @ Turmeric Mixed Rice 香喷喷的黄姜饭

One of hubby's elder sibling and two nephew also a Muslim and they celebrates  Raya  every year. But this year, we are not attending the  Raya  party. Hubby decided not to travel around so much, but rest more after the recovery from malaria. So, I decided to make a few Malay dishes at home instead.  I am a first timer making this  turmeric rice  cause normally we can have it at our Malay friends' houses during  Raya ( Eid al-Fitr)  time or wedding dinner. However, I am so glad I tried it. Everyone loves it !  The traditional  turmeric rice  is actually steamed glutinous rice with turmeric juice and coconut milk. Alkaline Dumpling @ Kee Zhang 鹼水粽

Chinese dumplings is often made or serve during  'Duan Wu Jie' or Dragon Boat Festival . However, nowadays you can easily get them all year round and some even brings it to pay respect to their ancestors during ' qing ming' festival . And alkaline dumpling is my favourite dumpling of all  Unlike the rest, this  'kee zhang'  turns out looking waxy & shinny and the texture is chewy and springy without any fillings in it. And it is normally eaten with plain sugar,  jaggery sugar syrup or kaya jam.  The yellowish colour of the dumpling is NO artificial colour. The colour is actually came from the lye or borax rock. Lye rock  (鹼水头) is easily available at any grocery shops or even supermarket during dumpling festivals. Vietnamese Steamed Banana Sticky Rice 越式香蕉糯米饭

Since there is a few more banana left behind, I wanna to try the Vietnamese banana sticky rice. Something I've been looking forward to a long time ago. This is what I have been told by a nearby Vietnamese friend, banana sticky rice is among the most popular food in Vietnam which is widely sold and made at home especially during   Dragon Boat festival  or  'duan wu jie'    The Asian is commonly known as ' zong zi '. But ' zong zi ' is usually wrapped in bamboo leaves which is more durable for storage. Ingredients : 300gm  glutinous rice, soaked for 4 hours 200ml   thick coconut milk, warmed 1 tspn  salt 90gm   sugar * 8 pcs banana leaves * 1  pisang tanduk , sliced Method : (1) drained rice then steam for 20 minutes without additional water. Nasi Kerabu Kelantan 吉蘭丹藍花飯

Guess what ! Finally, I got to taste nasi kerabu Kelantan during my previous trip to Kelantan. I was actually in Kelantan to help my girl to do some shifting a few weeks back. She's temporary moving home for out campus project and will be going back to Uni on next January. There's still one more shifting task need to be done in another 2 months time. Nasi Kerabu Terengganu 丁加奴兰江饭

Nasi Kerabu  is one of the many popular dish which is mostly served at the east coast of Malaysia.  'Nasi kerabu ' also translated as rice salad and this special dish normally comes with blue rice and all sort of vegetables &  'serunding' or meat floss  with a touch of the unique sweet & spicy gravy. And  'nasi ulam'  is quite similar to it as well except that it uses more herbs & green leaves vegetables on it. Too bad that I didn't get to try the original  nasi kerabu  during my last visit to Kelantan. So, its going into my list to do. A couple of weeks back, the east coast of Malaysia was strike by horrible flood. Luckily, the university that my girl studying at wasn't involved and she managed to get home a few days later by plane. I just sent her off yesterday. Taiwan Sticky Rice Roll 台式糯米饭团

Hubby's friend throw a mid-autumn festival party at the very last minute on the last celebration. He asked each of us who attend the party to come up with a dish. And I only have one day time to plan and to get it prepare the following day. Honestly, time is very very limited cause I'm also helping another friend to prepare a Hainanese chicken (blanched white chicken) on the same day. However, its my lucky day I guess ! I bump into this Taiwan sticky rice roll recipe just a day before the party, at  My Kitchen Snippet .  Have to thank  Gertrude  for sharing it. Since I have some  Siam glutinous rice  which I bought from Kota Bahru, I knew I got to bring this to the party for sure. Sticky rice is considered one famous street food over in Taiwan, China & Hong Kong. There are all kinds of filling available, savory or sweet. You just name it ! I think I prefer  vegetarian.
