Prawn Rendang 马来风味仁当虾

We have beef rendang and chicken rendang for most of the time but what about prawn rendang ! Just trying out my homemade prawns rendang the other day. Gosh, it was so delicious that, hubby finger licking good.  wakaka......  Something wonderful to share with my readers. Homemade Fish Paste 自制纯鱼肉讓料

This is how I make my fish paste or fish cake whenever I wanted to make stuffed tofu. The stuffed tofu or "yong tofu" is a very famous Hakka dish, which I learnt from my father in law. I never is a good cook before I got married and I seldom cook as well cause need to work. But after married, I need to cook often whenever going to my parents in law place. So from there, I started my cooking journey. And thanks to my father in law for this, otherwise, hubby won't be able to taste his traditional dish anymore. Please read on for more. 'Heong Dei Mei' With Fresh Water Prawns 香底米粉

Hubby bought a few kilos of live fresh water prawns on our last trip travelling during the Chinese New Year, at  Tanjung Tualang, Perak state.   Tanjung Tualang  is a very small town and large fresh water prawns is  the main attraction of this area. These prawns are widely breed since many years ago at most of the abandon tin mining area. These fresh water prawns are actually hubby's fishing bait.  hehe.....  However, there's still some dead ones after a long distance travelling. He doesn't mind I used some of them. I have to plan wisely cause only limited prawns I have in hand. It actually reminds me of using it on ' heong dei mei ' (in cantonese) or ' xiang de mee ' (in mandarin). Keropok Lekor Terengganu 登嘉楼特色炸鱼饼

I can't believe it myself that I'm actually making  keropok lekor  !!! Gosh, never in my life I would imagine myself making this, Terengganu fish cracker ! Its hubby favourite. I actually wanted to buy some of these during my last visit to Terengganu but hubby said NO ! However, I knew I'm going to give this a shot when I reached home and this is it. I have fulfilled it.  Keropok lekor  is the specialty of the east and it is normally made with small fishes or leftover fishes from the market place. Unlike the common fish cracker which is thin and crispy,  keropok leko r  is slightly thicker and fishy flavoured. And I have chosen to use   ikan kembung (scomber or bloating fish ) for the test run, cause its cheap and meaty compare to other small fishes. Garlic Salt Pan Fried Prawns 咸蒜粉干煎虾

Chinese New Year is almost over and tomorrow will be the last day of the whole season. We also called it as ' chop goh mei'.or 'yuan xiao jie'.  You may also  refer here  for more wonderful stories regarding the legend. I actually prepared this delicious prawns dish the day just before my girl went back to University. She is craving for home cooked meal. I want to prepare something simple and yet healthy for her. Homemade Cooked Salted Mackerel 自制熟鱼

This cooked salted mackerel  (ikan kembung masak)  is quite popular in Malaysia, where the fishermen used to gather all the leftover or partial of the overloaded small  mackerels (ikan kembung)  to cook or to steam them for storage. Then the cooked mackerels will be sold to wet market the next day for better price. One of hubby's uncle was a fisherman living at  Lukut , but already past away many many years ago.  Hubby used to go fishing with his boat during his younger age. And the best thing was, hubby also learnt how to prepare cooked salted mackerel from his uncle. So, here is my turn to present it to my readers. Ingredients : 3 medium size  whole mackerel fish, rinsed 1-1/2 TB  sea salt Method : (1)  rub salt to fishes and let to rest for 20 minutes. Hot & Spicy Sambal Seafood 麻坡叁巴苏东虾

Ingredients for Sambal paste : 30 dried red chilies, cut & soaked in hot water 6  shallots 1 inche galangal/blue ginger 1/2" ginger 2 garlic cloves 3 stalk  lemongrass, take only the white part 1"  belacan/shrimp paste ( combine all ingredients & grind to form paste ) Ingredients : 2  medium size squids 10pcs  medium size prawns handful of stink beans / petai 1 large onion, sliced 1TB  brown sugar 1-1/2 tspn  salt 1 tspn  granules Method : (1)  wash prawns and squid, then peel off the prawn shell on the middle part only. And then skinned the squid and cut into ring shape. As picture shown below. You may trim off the prawns' head the shape part and it really looks good. (2)  now, bring a pot of water to boil then stir in the squid for 2 minutes. Drain off boiling water and transfer squid into ice water. Drain of ice water once the squid is completely cooled. Homemade Asam Pedas Muar @ 麻坡亚参鱼

Ingredients : 2 pcs  large fish slices 5 stalk   daun kesum/Vietnamese mint 9-10 pcs  ladyfingers 1 tspn  salt or to your taste 3 TB  brown sugar 1 tspn  granules 2 pcs   asam keping/slices 100gm   asam jawa /tamarind paste 3 cups  water 1-1/2 cups  hot water 2 TB  lime juice Ingredients for  blended paste  : 30pcs  dried red chilies, washed & halved 5 shallots, sliced 1 large onion, sliced 1/2" ginger 3 stalk  lemongrass, sliced (take only the white bottom part) 1 inche  belacan / shrimp paste (combine all ingredients and grind into paste with some water) Method : (1)  let dried chilies to cook in boiling water for 5 minutes then off the heat and set aside to rest for 20 minutes.
