Air Fryer Carrot Cake 气炸锅红萝卜蛋糕

My 2nd baking experiment with air fryer.  This is a simple and yet easy to prepare carrot cake which didn't even need a mixer. All you need is just a quick hand mix then fold in the flour and the rest of ingredients. The size of the cake is just perfect to feed the 2 old folks at home... again ! haha......

So, here's what I did.
Ingredients : (6 inch cake tray)
125gm  all purpose flour
1 tspn  baking powder
1/2 tspn baking soda
80gm  brown sugar
60gm  fine sugar
1/2 tspn  salt
3 large eggs
180ml  corn oil
1-1/2 cup shredded carrot
1 cup  raisins

Method :
(1) mix together flour, baking powder & baking soda till well cooperated.
(2) beat eggs and all sugar till well combined, then stir in corn oil.


(3) now, fold in flour till well combined then stir in shredded carrot and raisins.

(4) transfer batter to a 6" baking tray lined with baking paper on the bottom.
(5) finally, bake at preheated air fryer 175'C for 25 minutes with aluminium foil cover on top (pop a few holes on it), then another 25 minutes at 165'C without the cover or till the cake is set or till tester came out clean. Check cake when reach the final 5 minutes.

Remark :  Making sure the aluminium foil is not lose. Use larger sheet to cover then tuck-in to the bottom tray, otherwise it will be suck upwards to the heater by high speed air.

Tips :  Bake this cake without using the basket, just place baking tray direct onto the baking box with a rack lined below. The baking temperature need to be set lower than the common oven used.

Good that now I can make all my baking in smaller portions, which is just perfect for 2 days supply for 2 persons. So, can plan to make something different every 2 days after. hehe.... Feeling blessed !

Homemade Ginger Wine 自制姜酒

My 2nd attempt making ginger wine. After a 3 whole months of waiting, I am truly happy with the result. It turns out really strong and smell really good compare to the previous batch I made. Keropok Lekor Terengganu 登嘉楼特色炸鱼饼

I can't believe it myself that I'm actually making  keropok lekor  !!! Gosh, never in my life I would imagine myself making this, Terengganu fish cracker ! Its hubby favourite. I actually wanted to buy some of these during my last visit to Terengganu but hubby said NO ! However, I knew I'm going to give this a shot when I reached home and this is it.
