Air Fryer Baked Tonic Chicken 气炸锅烘药材鸡腿

This is a simple Air fryer dish which I made lately with kampung chicken whole leg. Just great to serve only two persons. In case, you don't have the ingredients as given here. Just replace it with white wine, instead of using chicken essence and shaoxing wine. It is as yummy !But making sure you add in the dang gui (angelica root) slices. It gives you a fantastic aroma to the dish. Please read on for more.

Ingredients :
2 whole kampung chicken leg
a few slices (dang gui root) Angelica root
salt & pepper to taste
1/2 tspn  chicken granules
1 bottle of chicken essence
some shaoxing wine (omit this if you want to consume halal)

Method :
(1)  clean chicken leg thoroughly then marinade with salt & pepper to your taste and rest for about 20 minutes. And then place it to the AF baking tray.
(2)  when ready, pour in one bottle of chicken essence, 1/2 bottle of shaoxing wine/ rice wine and add in 2 bottles of boiling water (measured by using the same bottle). At the same time, drop in the dang gui root & granules. (as picture shown below)

(3)  next, cover the AF baking tray with aluminium sheet with holes on top ( as picture shown below).

(4)  finally, place baking tray to fryer basket and baked at preheated AF 190'C for about 40 minutes, then reduce to 180'C bake for another 20 minutes. Leave it in the AF till time to serve.

Kampung chicken (free range chicken) meat is tougher compare to common chicken meat, and that's why you need longer baking time. In future, you may also try this with drumsticks only which is much easier.

Keropok Lekor Terengganu 登嘉楼特色炸鱼饼

I can't believe it myself that I'm actually making  keropok lekor  !!! Gosh, never in my life I would imagine myself making this, Terengganu fish cracker ! Its hubby favourite. Eight Treasure Beggar Chicken 八宝乞丐鸡

Still remember the  beggar chicken  I prepared one month back ! And during the previous Chinese Dumpling Festival, I prepared another ultimate beggar chicken dish for my family to celebrate this special day.
